Rest Day, Boots and Angel Food Cake

I am making my first ever angel food cake tonight! Pretty sure that this is a fairly easy cake to make and after adding some berries and surprise b-day decorations, I’m fairly sure it’s going to be amazing.

Kinda hope mine turns out to be just as big of a hot mess as this one! (Sarah, if you’re reading, I hope you are getting excited!)

In other news, today will most likely be a rest day. Why? Because this girl is wiped. For whatever reason, I have been staying up past 11pm and midnight this week and still waking up at 5:30. I let myself sleep in this morning and have a pretty long to-do list tonight to prep for the weekend. Plus, my foot, knee and hip feel amazing and I want to keep that happy train rollin’!

I finally found my new fall boots! Just ordered these bad boys yesterday:

Dear Target, you are making me go broke. I still love you though. I’m excited to see what these look like in person and am hoping that the dark brown looks good with jeans and won’t clash too much with black pants.

Only one day left until girls weekend in Seabrook! I’m so excited I could puke (symptom of sleep deprivation?) and can’t wait to get on the road tomorrow. I love beaches – hot or cold – and can’t wait to kick back, drink some adult beverages and laugh until my stomach hurts.

Dirty 30s and Fall Fashion Wish List

I’m working remotely from Sierra Vista for the next two days and am reminded how much I love “working from home”. My day started pretty early, as Scott gets up early for PT and I couldn’t really go back to sleep, so I made myself some instant coffee and breakfast.

Today, breakfast consisted of 2 eggs, an apple, 1 piece of toast and a little strawberry jelly with instant coffee – not my typical breakfast. Pretty sure starting your day off with that much sugar is not a good idea.

Hoping to get some kind of run in today and thinking I should get out there before it gets too hot. Since I am a little sore, I will cap it at 30 minutes with a 4:1 run/walk ratio and a 20-30 minute walk. Also, need to do some work stretching out the IT band and the ACL, along with throwing in a hip, leg, core and arm circuit.

“Dirty 30 Circuit” – repeat 3x

  • 30 air squats
  • 30 push-ups
  • 30 sit-ups
  • 30 burpees
  • 30 lunge split jumps

Then, just for funsies, I want to add in some hip and glute work. Three rounds of 25 reps each of: clamshell leg extensions, side leg lifts, donkey kicks, superman, bridges and calf lift. My old foam roller is here, so I’ll give that a little workout too and make sure to really stretch out, since my left knee has been pinching a little lately.

Last night in between my flights I picked up an US magazine (I know, guilty pleasure) and developed a crush on a few new items for fall. So here is what I am pining for this fall:

  • Nollie long-sleeve print dolman cardigan with pockets,, $26.50
  • Tory Burch ‘Jaden’ canvas tote, Nordstrom, $225

I also need to find a good pair of brown and black boots. I love the brown wedge boots that they sometimes sell at Target, by Merona I think, but they seem to sell out extremely fast.

Jump Roping and New Clothes

I can’t believe it’s already Monday – this weekend just flew by!

I started off my day with the following jump rope circuit:

Do 50 reps of each exercise below, with 1 minute of jump roping between each exercise:

  • clamshell leg extensions (banded)
  • jump squats (banded)
  • side leg lifts (banded)
  • sit-ups
  • bridges (banded)
  • lunges
  • bicep curls
  • donkey kicks
  • russian twists
  • air squats (banded)
  • supermans

The whole thing took about 35 minutes and did a good job at getting my blood moving and waking me up. Tonight I plan on attending yoga and hoping that it loosens up my sore right shoulder.

In other news, this weekend was super productive. On Saturday I ended up sleeping in until after 11, which is really unusual for me, but felt fantastic. I went for a nice run outside (it was actually hot here!) and then met my friend to watch the UW huskies get destroyed by LSU. I took the rest of the night easy in anticipation of an all day rescue training course with the Red Cross. Sadly, the instructor never showed up, so I will need to reschedule. Instead, I spent the day shopping with the $125 check I received from my insurance company (just for filling out a health questionnaire!).

Here’s what I got:

H&M: Purple skinny pants and black & white sleeveless top

Forever21 (I know, shameful): orange blouse, denim jacket, gold ring, white t-shirt

Macy’s: cream sweater

DSW: 2 pairs of Aerosoles loafers – one black and one brown, both paten leather

I was in pretty desperate need of some new clothes and thinking that my coworkers would probably like to see me in something new – really thankful for that random bonus check!

I’ll be working remotely from Arizona in 2 days and I can hardly wait! Hoping today and tomorrow fly by.

My Non-Paleo Weekend

This weekend was awesome. It was the Sea Fair airshow and after spending nearly 6 hours taking my online boating safety certification on Friday, I was ready to boat captain it up!

After an extremely unproductive day at work on Friday, I got a strong urge to bake and to buy peanut butter – both are very strange urges for me. So my friend Tracy and I headed to the store and I ended up getting mostly non-paleo ingredients to make cookies, banana bread and frozen Greek yogurt.

All the recipes turned out tasting pretty good, except for the banana bread being a bit too moist (that is possible).

Blueberry Greek Yogurt Banana Bread

  • 1 1/2 cups = 3 tbsps gluten free flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 3 large bananas
  • 2 eggs
  • 6 oz blueberry Greek yogurt
  • 1 cup blueberries

Mash the bananas in one bowl, mix dry ingredients in another. Then add all ingredients together, stir and pour in greased bread pan. Bake at 375 for about 30 mins. Mmmmm.

My phone is pretty ghetto, so the picture doesn’t do it justice.

The cookies were way more simple: 1 cup peanut butter, 1 cup honey, 1 tsp baking soda, 1 egg and about 1 cup rolled oats. Mix and bake at 375 for about 10-15 mins. I don’t have a picture of these, but they were amazing, and calorie dense.

The frozen Greek yogurt is pretty self explanatory. I added blueberries and some dark chocolate to plain non-fat Greek yogurt and froze it – delicious. I served this over apple rolled oats pancakes Sunday morning and I got some positive feedback.

Apple Rolled Oats Pancakes:

  • 1 cup rolled oats
  • 1/2 cup applesauce
  • 1 egg
  • 2 tbsps brown sugar

Mix all ingredients together and cook over low heat. I cooked them using coconut oil and I think that added a bit more flavor. The whole batch is about 350 calories between two people and went really nicely with the frozen Greek yogurt.

And lastly (and maybe the most exciting part of the weekend) – I bought compression socks!

I am really excited to try these bad boys out! Hoping they will help get my foot back into running shape so I can start working on the 10k in 40 mins plan.

Jump Roping & Sardines

Now that it’s been a little over 5 months since I fractured my foot, I decided that it’s time to stop babying it.

My goal is to add in a CorssFit-esque workout 3x/week, along with cardio and hip and leg strengthening. Oh, and do all this without breaking my foot again, or messing up my knee or any other general injury that I seem to acquire.

So yesterday I did the following jump rope exercise: 30 minutes total, repeat the following sets:

  • jump rope for 1 minute
  • ab work for 1 minute
  • jump rope 1 minute
  • push-ups 1 minute
  • jump rope 1 minute
  • wall sits or jump squats for 1 minute

It was awesome.

Then I added 15 minutes of hip exercises to help stabilize my knee and an hour of yoga. Really loving yoga currently. The teachers are always a little on the crazy side, but it’s really relaxing and has already helped with hip and overall flexibility.

With beets still on the mind, I made a beet and veggie smoothie for dinner, along with a few sardines and some barley.

Smoothie: 1 container plain non-fat Greek yogurt, 2 handfuls of spinach, kale, 5 frozen strawberries, 5 slices of canned beets and beet juice.

I’ve heard beet juice is a good recovery drink and helps prevent sore muscles. I’ve also heard that beer is a good recovery drink. I’d probably side with the beer loving folk.

Also, I am buying compression socks and sleeves tomorrow. I’ve read mixed reviews on whether they are necessary or not, but they come in hot pink and yellow, so I’m getting them anyway.

Lululemon: Death To My Bank Account

A girl can only be so disciplined – watching what she eats, trying to sleep 8 hrs a night, not allowing herself to “pin” all day at work, etc. And then there are her vices.

One of mine is Lululemon.

I’m not what you’d call a yogi and a physical therapist once referred to my flexibility as that of a “fit 70-year-old woman:, whatever that means. But, as it says in my blog title, I love the lycra and can’t get enough of yoga gear.

I made the mistake a couple months back to follow Lulu on Facebook, not knowing that I would then receive updates on new merchandise, sales, events and other things that “you can’t live without”. Turns out their advertising is effective.

Their latest stab to my bank account: a line of swim wear and dresses.

However, I plan on restraining myself from the swimsuits and picking up a pair of these running crops for the summer to wear with a tunic.

Oakley’s & A To-Do List

Now that I am 1 day into my tri training, I feel it appropriate to begin gearing up. First step: Oakley’s.

I saw this pair in the April issue of Self Magazine and instantly felt like they belonged on my face.

I have never run with sunglasses before, but these have grips on the sides so they stay in place. Also, they will block out UV rays and make me look more legit while running.

In other news, I discovered the blog Lark & Linen the other day and love her posts on “scenes from my weekend“. I love the idea of capturing the small moments in life and putting together an online collage, if you will, of past memories.

And lastly, my goal for this spring/summer (sprummer) is to be more random and adventurous.

My list of random things include:

  • Putting random pics of JT on people’s calendars
  • Leaving sticky notes in secret places for the bf to find
  • Buying someone random a coffee
  • Volunteering with a new organization
  • Take a dance class (when my foot is ready)
  • Breaking out in dance at random or inappropriate times
  • Paint a picture and mail it to a friend
  • Texting or emailing my sister-in-laws more often (ok, this isn’t really random, but important nonetheless)

Kale Chips and Red Pants

My latest culinary adventure involved making kale chips.

I’ve wanted to try making these ever since I saw a tiny bag of them at Whole paycheck for around $6, but thought that sounded a bit steep. I bought an entire bag of kale from TJ’s at about $2 and it took me about 20 mins to turn them into chips.

I pretty much guessed how to make them (hint: it’s not hard) and just pulled the leafy part off the stem, put them on a baking sheet, sprayed with olive oil and added pepper and light sea salt. I baked them at 400 for about as long as it takes to fold a load of laundry.

They were delicious.

Only down side is that by this morning they were a bit on the soggy side, but that didn’t stop me from eating them with my eggs.

The excitement continued for me last night, as I met with my friend to go shopping at H&M. I finally found the perfect pair of red capris, that I matched with a cream polka dot blouse. Personally, I think it is a very clean, classic look.

My next buy: blue capris from the Gap. They are super comfortable, I just couldn’t bare to part with another $60 in one night. A girl has to draw the line somewhere.

And lastly, today marks day 1 of wearing two normal shoes to work! Today also marks the 3rd time I have worn jeans in the last 2 months. Very exciting indeed.

White Pants Scare Me

True story. If I had to make a list of fears, white pants would be in the top 20.

Why? Mostly because I am spastic. Drinking coffee would scare me, eating or drinking anything that wasn’t clear would scare me and most of all, forgetting that white pants are see-through and wearing rainbow print underwear. Need I say more?

However, with the fears aside, I feel like I still need a pair of white linen pants. What if someone were to invite me on their sailboat?

With that, I am considering these pants from the Gap:

In other fashion news, I discovered the Nordstrom bonus points calendar this morning. This is awesome and terrible at the same time.

And now, two final thoughts: 1) Whipped cream vodka is delicious. 2) Really like the blog, Kipping Squats – full of awesome paleo recipes and inspiration. Oh, and the author is a member at my CrossFit gym, nbd.

Sprummer 2011

I know it’s only March, but a quick glance at my calendar this morning has made me super giddy. With the exception of April, in which basically nothing is happening, I have a full line up of trips starting in May and running solid through July. In order, I will be traveling to Whistler, St. George, Utah, Greece, Arizona, Seabrook, WA, California and Shelton.

Shelton, WA is for sure the most exotic, so be jealous.

With all of this lined up, two things popped into my head: 1) I am going to be broke and 2) I really need some new sprummer clothes.

The first problem was solved by the wonderfulness of credit cards (kidding, mostly) and the second was solved by Target – my second true love. Here is my shopping list for sprummer 2011:

Starting from the top left: all skirts are from Target. Hat – Target. Zip-off pants – REI. Blue capris – GAP. Asics Gel Blurr-33 – Nordstrom. White coverup – Target.

Once my sprummer collection is complete, my next task is to focus on work and not be distracted by the thoughts of beaches, margaritas and debt.

Also, I bought a new nail polish last night called “Blue Me Away!”. Not sure if it’s really blowing me away, but here is a look.

Don’t judge how odd my hand looks, it must be the camera….

And lastly, I will leave you with a creepy, yet convenient fact/story.

I needed a duplicate key made for my apartment, so last night I went to a little kiosk at the University Village and paid $3.60 to have a duplicate made in about 90 seconds. This was extremely convenient and fast, but creeped me out how easy it is to have a key copied and how anyone can do it.
